Ingredients
- Vegetable oil or olive oil.
- Bay leaves (2)
- Cumin seeds (1tbps)
- Ginger paste or freshly grated ginger, approx 3 tbs
- Garlic paste or freshly grated garlic, approx 3-4 cloves
- Turmeric powder (1tbps)
- Paprika powder (1tbs)
- ½ red onion chopped.(Alternatively, this can be blended with the rest of the onion)
- 1 big red onion blended (It is important that this be blended for the smooth texture)
- 3 medium tomatoes blended(It is important that this be blended for the smooth texture)
- Chile as per taste (optional)
- 2 medium potatoes. Roughly ½ potato per person
- 12 hard boiled eggs
- Salt to taste

Preparation
- Chop the 1 onion in dices
- Chop half an onion in slices
- Chop the tomatoes in dices
- Blend the onion and tomatoes into a kind of a smooth puree
- Finely chop the garlic ( or just better just grate it )
- Finely chop the ginger ( or better just grate it )
- Boil your eggs and put them in a bath of cold water
- Them peel them off
- Grill the eggs in the oil so they get brown and delicious
- Boil your potatoes
The paste
- Within the oil add the ginger and garlic and saute them so they are not raw
- Add the paprika , bayleaves, cumin, tumeric and stir fry together
Put it all together
- When you have a nice aroma, add the blended onions and tomatoes
- Add this point you can add salt and habaneros or other chile to spice up the meal
- Mix everything togehter and add the eggs and the potatoes
- Let everything simmer for 20 minutes with a lid on
